Chianti DOCG Fattoria dei Barbi
The grape is no longer the classic one, which consisted of white grapes, but what is now defined as the “modern classic,” with Sangiovese at ninety percent (90%) and the rest comprised of other red berry Tuscan grapes: Canaiolo, Colorino and Ciliegiolo. A pleasant wine, easy to drink, but should be consumed early on, although it can last up to five years, and sometimes, in the best vintages, it can last up to ten years. In the kitchen, it goes well with main Tuscan dishes like the ribollita or pinci, yet it lends itself quite well to simple foods like pizza. The Chianti production is about 40,000 bottles per year. TASTING NOTES
