What is Brusco
This red wine is the result of years of researches on the fermentation of grapes from Montalcino, done in the Sixties and Seventies by Giovanni Colombini. This wine is very versatile and approachable, ideal as an everyday companion to be shared around a table with family and friends. It is produced mostly with Sangiovese, enhancing the typical fruity aspect of this varietal when it is drunk young.
Before the regular fermentation the grapes were subjected to a cold pre-fermentative maceration which consists in cooling the grapes at a temperature of 16°C. This process increases the extraction of polyphenols and aroma compounds. The alcoholic fermentation lasted 10/12 days at a controlled temperature of 27° – 28° C. The wine remained in the stainless steel vats until bottling.
Brilliant and lively ruby red . A bright fruit nose presents red berries and wild strawberries, enriched by subtle floral notes. Supple on the palate, fresh-tasting and delightfully drinkable.
Very versatile, it complements well white meats, hams and salami, spicy sauces, fresh cheeses and traditional pizzas. Serve at a temperature of 18°C.
