Every Caseificio dei Barbi cheese features a fully edible natural rind, intended to be enjoyed as an integral part of the tasting experience. Unlike many commercially produced cheeses, our rinds are made without chemical surface treatments, allowing the entire cheese to be enjoyed. This reflects our commitment to traditional cheesemaking, natural production methods and meticulous craftsmanship.

Paste. White.
Flavour. Bitter chestnut notes, pleasantly balanced by the sweetness of the pollen.
Aroma. Notes of beeswax, with candied orange on the finish.
Packaging. Each cheese is vacuum-sealed and then carefully hand-wrapped. As our cheeses are handcrafted using traditional methods and free from chemical surface preservatives or antifungal treatments, vacuum packaging is the best way to preserve their freshness, integrity and natural characteristics throughout storage and transport. It also ensures that every part of the cheese, including the rind, remains fully edible.

Storage. Keep refrigerated at 4–10°C.
Shelf Life. 5 months from the packing date.
Serving Advice. For cheeses from the Gli Affinati, Le Riserve di Fattoria and Eccellenze di Montalcino collections, remove the cheese from the refrigerator and its vacuum pack 2–3 hours before serving. Wrap it in a clean cloth and leave it to breathe at room temperature. This allows excess moisture to evaporate, restores the cheese’s natural texture and allows its aromas and flavours to fully develop.

We loved both this concept and the cheese that it has produced. The use of chestnut honey is so well placed, appearing as a supporting act rather than hijacking the entire show. The pecorino itself is very well balanced with the salt level meeting the honey to create a deep savour, whilst the pollen in the rind introduces fresh florals. There’s a lot going on here, but it all sings in harmony.
The judges love the skill in making a Pecorino of this size that has such perfect texture. The Pecorino itself has excellent flavour, and is lengthened by the honey and pollen that give a real elegance to the product. We loved how easy this was to eat and applaud the precise amount of salt.
A neat and modest little cheese, there is a gently tangy aroma with some sweetness in the background. The chestnut aspect of the honey is clearly evident as we taste, but we find the sheep character rather more restrained. The paste is smooth and creamy, with a welcome evolution of flavour, the honey adding continued interest alongside the savoury tang. A beautifully made cheese just lacking for some judges more pronounced sheep’s milk flavour.
A fascinating sounding honey, and it certainly looks inviting in its small format. The aroma carries both honey and sheep milk notes. The palate is extraordinary: there is a marked sweetness from the honey melding with savouriness from the cheese, and a notable edge of bitterness from both chestnut honey and pollen. Salinity is well judged but depth of umami palpable. This really travels the whole gamut of tastes, with fascinating flavour dimension added. The rind truly gives added dimension to the experience, we are so pleased it is also edible. There is remarkable palate persistence: a truly great innovation.
