Dry red wine, 100% Sangiovese grapes. This Riserva of Brunello is made with a special selection of grapes collected from our best vineyards in Montalcino. The ageing in barrel and in bottle is longer than the one for a regular Brunello, thus the wine has a deeper concentration and a wider complexity of aromas. <\/em><\/h3>\r\n

Grapes <\/strong>Sangiovese 100%.<\/p>\r\n

Vineyards <\/strong>Property of Fattoria dei Barbi, located in the district of Montalcino and registered for Brunello di Montalcino production. Soil<\/em>: marl. Altitude<\/em>: 400 mt slm. Average age<\/em>: 20 years. Orientation<\/em>: South East. Vine Training System<\/em>: Cortina semplice. Vine Stock per hectar<\/em>: 5.000. Yeld per hectar<\/em>: 60 ql.<\/p>\r\n

The Year 2012 <\/strong>The climatic development of 2012 was very unusual. The beginning of the Winter was dry and mild, until the end of January when the weather changed drastically with snow storms and temperatures below zero. In the Spring the climate was dry with warmth above the average, without the regular rains of the period. The Summer was hot for many weeks, keeping the humidity high, until September, when few rainy spells brought back the weather to a more sympathetic level for a balanced maturation of the grapes.
The harvest started on September 18th and finished on October 3th.<\/em><\/p>\r\n

Vinification <\/strong>Before the fermentation the grapes were subjected to a cold pre-fermentative maceration which consists in cooling the grapes at a temperature of 16\u00b0C in an environment protected by CO2. This process increases the extraction of polyphenols and aroma compounds. The regular alcoholic fermentation followed and lasted 16\/17 days at a controlled temperature of 27\u00b0-28\u00b0C. After the racking and the malolactic fermentation the wine aged in small-medium size oak barrels (2,25 \u2013 15 hl) for the first months. Later it completed the aging in larger oak barrels, for a total period of three years and then is bottled at least 6 months before the release.<\/p>\r\n

Chemical Analysis <\/strong>Alcohol<\/em> 14,5 % \u2013 Tot. Ac.<\/em> 5.4 g\/l \u2013 Vol. Ac.<\/em> 0.39 g\/l \u2013 Residual sugars<\/em> 0.9 g\/l \u2013 Dry extracts<\/em> 33.0 g\/l.<\/p>\r\n

Sensory Analysis <\/strong>Colour<\/em>: intense ruby red. Bouquet<\/em>: intense, ample, complex. The well defined spicy notes of cinnamon, macis and wild herbs are well integrated with hints of red berries and maraschino cherry. Taste<\/em>: elegant and classic. The soft tannins wrap perfectly the acidity giving persistence and balance to the wine.<\/p>\r\n

Food Combinations <\/strong>Wine for important occasions, matches roast or braised meat, game and mature cheeses.<\/p>\r\n

Serving Temperature <\/strong>Serve at a temperature of 18\u00b0C.<\/p>\r\n

Capacity of ageing <\/strong>20-80 years.<\/p>\r\n

Conservation and storage <\/strong>Keep the bottle horizontally in a dark place at a temperature of 12\u00b0-14\u00b0C.<\/p>\r\n
