The Fiore is the most Southern vineyard in the Fattoria dei Barbi estate, in the Southern area of Montalcino\u2019s district. It is a narrow valley with shale soil, here the grapes for the future Brunello Vigna del Fiore ripen perfectly, protected from cold winds and hot Sirocco. The Ribusuoli brook is never sparse of water. The result is a sumptuous Brunello, elegant and complex.<\/em><\/h3>\r\n

Grapes <\/strong>Sangiovese 100%.<\/p>\r\n

Vineyards <\/strong>Property of Fattoria dei Barbi, located in the district of Montalcino and registered for Brunello di Montalcino production. Soil<\/em>: marl and alberese in the highest part of the vineyard. Altitude<\/em>: 270-294 mt slm. Average age<\/em>: grape vines planted in 1991. Orientation<\/em>: South – South West. Vine Training System<\/em>: Cortina semplice. Vine Stock per hectar<\/em>: 4.130. Yeld per hectar<\/em>: 55 ql.<\/p>\r\n

Vinification <\/strong>Before the fermentation the grapes were subjected to a cold pre-fermentative maceration which consists in cooling the grapes at a temperature of 16\u00b0C in an environment protected by CO2. This process increases the extraction of polyphenols and aroma compounds. The regular alcoholic fermentation followed and lasted 16\/17 days at a controlled temperature of 27\u00b0-28\u00b0C. After the racking and the malolactic fermentation the wine aged in small-medium size oak barrels (2,25 \u2013 15 hl) for the first months. Later it completed the aging in larger oak barrels, for a total period of two years and then is bottled at least 4 months before the release.<\/p>\r\n

Sensory Analysis. <\/strong>Colour: <\/em>lively ruby red. Bouquet<\/em>:<\/em> big impact on the nose with vibrant fruity fragrances, marked presence of ripe cherry, blackcurrant and plum. Suggestions of vanilla and unsweetened cocoa. Taste:<\/em> enveloping and complex. Persistent aftertaste which perfectly recall the olfactory aromas of cherry, plum and liquorice.<\/p>\r\n

Pairing <\/strong>Perfect for important dishes, roasted or grilled red meats, game, venison, stewed wild boar. Excellent with mature cheeses.<\/p>\r\n

Serving Temperature <\/strong>Serve at a temperature of 18\u00b0C.<\/p>\r\n

Capacity of ageing <\/strong>20-60 years.<\/p>\r\n

Conservation and storage <\/strong>Keep the bottle horizontally in a dark place at a temperature of 12\u00b0-14\u00b0C.<\/p>\r\n
